11 August 2026If you love dumplings and tacos, this recipe combines the best of both. Crispy, golden dumpling wrappers are smashed onto seasoned pork, pan-fried until caramelised, then topped with crunchy slaw and a creamy spicy sauce before being dipped into a savoury soy dressing. They’re quick, packed with flavour and guaranteed to become a family favourite.
Ingredients
Tacos
- 500g pork mince
- 1 packet round gyoza wrappers
- 2 tsp sesame oil
- Salt and pepper
Pork Seasoning
- 2 cloves garlic, crushed
- 1 tbsp grated fresh ginger
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
Slaw
- 2 cups shredded cabbage
- 1 carrot, julienned
- 2 spring onions, sliced
- Fresh coriander leaves
Spicy Mayo
- ½ cup whole egg mayonnaise
- 1 tbsp sriracha
- 1 tsp lime juice
Dipping Sauce
- ¼ cup soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp chilli crisp or chilli oil
- 1 spring onion, finely sliced
- 1 tsp sesame seeds
Method
- In a bowl, combine the pork mince with the garlic, ginger, soy sauce, oyster sauce and sesame oil.
- Divide the pork mixture into small portions and press a thin layer onto one side of each gyoza wrapper.
- Heat a lightly oiled frying pan over medium-high heat. Place the tacos meat-side down and cook for 3–4 minutes until caramelised.
- Add a splash of water, cover with a lid and cook for another 2 minutes to steam the wrapper. Remove the lid and cook for another minute until the wrapper is lightly crisp around the edges.
- Mix together the mayonnaise, sriracha and lime juice.
- Combine all of the dipping sauce ingredients in a small bowl.
- Fill each taco with the cabbage, carrot, spring onion and coriander, drizzle over the spicy mayo and serve immediately with the dipping sauce.
These crispy smash dumpling tacos are perfect for sharing and are just as fun to eat as they are to make. Serve them straight from the pan while they’re still hot and crispy, and don’t skip the dipping sauce—it brings everything together.
